Ogbono Soup Recipe:
Ogbono soup is a popular Nigerian soup that is known for its unique thick and slimy texture. Here’s a basic recipe:
Ingredients:
– 1/2 cup ground ogbono seeds (African wild mango seeds)
– 2 cups of water or stock
– 1 pound of assorted meat (beef, tripe, or whatever you prefer)
– 1/2 cup palm oil
– 2-3 cups of chopped vegetables (spinach, okra, or ugwu leaves)
– 2-3 tablespoons ground crayfish
– 2-3 stock cubes or bouillon cubes
– Salt and pepper to tasteInstructions
3. In a separate pot, cook the assorted meat with some water and season with stock cubes, salt, and pepper. Cook until the meat is tender.
4. In a bowl, mix the ground ogbono seeds with palmoil to create a smooth , thick paste . ensure the mixture is well combined.
5. Add the ogbono paste to a pot and place on fire. Stir well and allow it to cook for a few minutes. You’ll notice it thickening and becoming stretchy.
6. Pour in the meat stock from the cooked assorted meat. Stir continuously to prevent lumps and achieve a smooth consistency.
7. Add the cooked assorted meat, ground crayfish, and any additional seasoning you prefer. Let the soup simmer for about 10-15 minutes.
8. Finally, add the chopped vegetables to the pot. The choice of vegetables is up to you, but popular options are spinach, okra, or ugwu leaves. Allow the soup to simmer for an additional 5-7 minutes until the vegetables are cooked to your liking.
9. Taste the soup and adjust the seasoning if necessary.
10. Serve the Ogbono soup hot with your favorite Nigerian swallow, such as fufu, eba, or pounded yam.
