HOW TO MAKE COCONUT FRIED RICE INGREDIENTS* Rice* Coconut milk* Chicken* Garlic* Ginger* Red bell (diced)* Green bell pepper (diced)* Carrots (diced)* Green peas* Green beans (diced)* Spring onion (diced)* Onion (chopped)* Sweet maize* Liver* Salt* Grounded pepper* Seasoning cubes* Curry powder* Thyme* Coconut/Vegetable oil PREPARATIONS* Wash and season the chicken, liver with some seasoning cubes, salt, curry powder, grounded pepper, thyme, blended ginger, garlic and onion. Cook for 10min, add some water and cook until it’s tender. Fry and cut the liver into smaller sizes.* Wash the rice until the water runs clear. Transfer the rice into a pot, add the meat stock and coconut milk. Adjust with salt and seasoning cubes and let it cook until it’s done.* In a pan, heat up some coconut oil or Vegetable oil, add the chopped onions, fry for about a min. Add the diced carrots and fry for 2mins. Add the bell peppers, green beans, green peas, sweet corn, cut liver. Add some salt and seasoning cubes, stir and fry for 3mins.* Properly combine the rice together with the fried Vegetables. Garnish with some spring onion and serveENJOY
