    Follow Prosper Toluwani for more

Efo riro is a popular Nigerian stew made with leafy greens like spinach or bitter leaves, and meat or fish. Here’s a simple recipe to cook efo riro:

    Ingredients:

    – 2 cups of leafy greens (spinach, bitter leaves, or a combination)
    – 2 tablespoons of vegetable oil
    – 1 onion, chopped
    – 2 cloves of garlic, minced
    – 1 teaspoon of grated ginger
    – 1 cup of meat or fish (optional)
    – 1 tablespoon of tomato paste
    – 1 teaspoon of ground crayfish (optional)
    – Salt and pepper to taste
    – 2 cups of water

    Instructions:

    1. Heat oil in a pot over medium heat.
    2. Add onion, garlic, and ginger and sauté until softened.
    3. Add the meat or fish (if using) and cook until browned.
    4. Add the leafy greens, tomato paste, crayfish (if using), salt, and pepper. Stir well.
    5. Add the water and bring to a boil.
    6. Reduce heat and simmer for 15-20 minutes or until the greens are tender.
    7. Serve hot with fufu, rice, or bread.

Note: You can adjust the ingredients and spices to suit your taste preferences. Additionally, you can use different types of leafy greens and protein sources to vary the flavor and texture of the stew.
